For Doc who requested this recipe for Pumpkin Soup, but I somehow keep on forgetting to post it.
Cooking Oil
1 Onion chopped
1/4 Pumpkin, peeled, seeds removed and chopped
1 cup water
1/2 cup all purpose cream
1/2 cup milk (any will do)
White pepper
Salt
1. Heat oil in a pan and add onions, cook until the tips are brown.
2. Fry the chopped pumpkin with the onions until tender.
3. Add 1 cup of water and let the mixture boil until the pumpkin bits are soft.
4. Put the pumpkin and water mixture into a blender and puree.
5. Put puree back in the pan, and add 1/2 cup of cream and 1/2 cup of milk.
6. Simmer till slightly thick, add salt and pepper to taste.
